My latest odd idea is using a stainless steel kettle as a fermenter. It seems simple enough, but I also want to pressurize it.
I love the idea of a stainless fermenter. It's durable, won't bust like glass, and is easy to clean and sanitize. This particular kettle also has nifty handles and is pretty short, which is great for fermenting in the freezer. It also will be nice for yeast pitching, dry hopping, and to play around with top cropping the yeast.
What I don't like about it, is I can't rack the beer under CO2 in a closed system. I'm working on that though... more details to follow. Also, there are rivets on the inside that may be a sanitation issue. The rivets are at about 6.5 gallons. So, I figure with a wide surface, and maybe a little foam control, I should be safe. If it get up there, then I'll just soak and give it a little elbow grease. Still, I don't like something I can't see.
