Man, this sucks. So per my earlier post, I've got four 1/2 gallon test batches going. All were absent of the EA except for the fourth, which I used yeast harvested from a previously affected batch. They still need to finish fermenting out, but I think I can call this done.
So, where does this leave me?
A - The WLP838 doesn't give me the EA
B - My problem is with my starters
C - Uhh.....
One good thing is that the EA did pass into my next batch. That's something to chew on. Right now, my thoughts are something is going wrong with my starter wort, and since I saw it pass from a harvested batch, then maybe that's what's happening. I'm still thinking it could be a nutrient thing. Maybe too much nutrients with lots of O2, room temp, and growth.
I believe it's possible that wild yeast can cause EA, but I'd figure it would be showing up in my ales, so I've been ignoring the sanitation bit.
Right now I've got two more test batches going made from the starter wort. One is using a fresh WLP833 vial, the other Saflager dry yeast. I put them both on the stirplate, and kept them for about 12 hours until active, then tossed them in the fermenting freezer. I'll see if this points me anywhere.
I'm annoyed that I had to use WLP838 right now, which just adds to the variables. :-/
