Yet another German Pilsner. This is a double batch to test the latest ethyl acetate theories. Nothing fancy here. I knocked this out during an ice storm. I circled the date since it was supposed to be warm for a couple days, and turn out it stormed. Oh well... at least it wasn't 5-degrees.
Something of interest is I've been using acid malt for my pH. This time I used 1/4 lb per 5 gallons and the mash pH was just a little low. It was about 5.1. Next time I may go 3oz and adjust up, maybe 2 oz on a beer with some specialty grains. Just something different to try instead of adding salts or acids.
